Eating black eyed peas on New Years Day will bring you good luck! Well not sure of that, but black eyed pea soup is a hearty and healthy way to start the New Year!

I sure needed a good dose of homemade soup after coming off of a great week visiting my brother’s family in New Jersey!  We had a jam packed week that included a trip to NYC, ice skating, lots of walks, cookie decorating, seeing the musical Oliver, lots of great meals and of course Christmas Day!  My nieces are seven and ten and it was so great to spend time with them witnessing the magic of Santa. The look on their faces when they saw the tree with all their gifts was priceless!  I am so blessed to have such an amazing family but probably my greatest joy is getting hugs from the girls.

So now back at home in Denver and the end of year organizing has begun! I started organizing on Sunday and made this black eyed pea soup. My house smelled so amazing and I figure if I eat this all week, I’ll have really good luck in 2014! LOL! All kidding aside, why take a chance? The people in the South eat black eyed peas every New Years Day!

Black Eyed Pea Soup

Happy New Year good luck soup!
Ingredients
  • 1 pound dried black eyed peas
  • 2 tbsp olive oil
  • 1 cup onions diced
  • 3 cloves garlic minced
  • 4 carrots cut into rounds
  • 1 red pepper diced small
  • 1 pound smoked sausage (I used Turkey), cubed
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • 1 tsp salt
  • 1 tsp pepper
  • 6 cups chicken broth (preferably homemade)
Instructions
  1. Place beans in a large sauce pan, cover with water and bring to a boil. Boil beans for 5 minutes and remove from heat. Let stand for one hour. Drain and set aside.
  2. In a dutch oven heat olive oil and saute onions, pepper and garlic for 5 minutes.
  3. Add sausage, bay leaves, thyme, beans, salt and pepper and stir until well incorporated.
  4. Add chicken broth and simmer until the beans become soft. This took me about an hour and a half.
  5. Serve and enjoy.
