So I’m kinda digging this food blogging thing. Some pretty cool opportunities are starting to fall into my lap and I love it. Last month I was asked to participate in the Food Blogger Cookbook Swap, hosted by Alyssa of www.EverydayMaven.com and Faith of www.anediblemosaic.com , I sent a cookbook to another food blogger and received this cookbook in return!
My book came from Sydney who lives in California. She sent me a beautiful vegetarian cookbook. The book “peas and thank you” is not only a super clever name, it has some great ideas for vegetarian and vegan cooking. Make sure you check out Sydney’s blog at http://donewithcorn.blogspot.com/. She makes a lot of super clean food recipes as it looks like she has food allergies. She may be a good contact if you have food allergies too!
So our assignment was to make a recipe from our new book. I thought that I would make the Thai Veggie Burger. Sounded good and something that I have never tried in my life! So after scanning my pantry this morning, I had everything in my house to make the recipe. (When does that ever happen)? I ended up adapting the recipe from the book as the first round didn’t turn out to my liking and quite honestly needed more flavor and texture. I upped the amount of oats and added Serrano peppers, salt and pepper. I think this version turned out better. It held together more tightly and the Serrano peppers added some heat which I like in my Thai foods. It also just needed salt and pepper! Doh…
So I hope you try this on your next ‘meatless” Monday and check out the beautiful cookbook “peas and thank you”! It’s a good one for your library! I’m glad it’s in mine now!
- 1 cup old fashioned oats, ground into a course flour
- 1 14-oz can cannellini beans
- 2 tsp low sodium tamari sauce (or low sodium soy sauce)
- 2 tsp lime juice
- 2 teaspoons sesame oil
- 1 garlic clove
- 1/2 teaspoon ground ginger
- 2 tablespoons smooth peanut butter
- 1/4 cup fresh cilantro
- 1/2 small Serrano pepper
- 3/4 cup broccoli slaw
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 green onions sliced thin, white and green parts
- 4 hamburger buns or sandwich thins
- 4 pineapple rings (fresh or canned)
- In a food processor, grind oats. Add beans, soy sauce, lime juice, sesame oil, garlic, ginger, peanut butter, cilantro, Serrano pepper, broccoli slaw, salt and pepper. Pulse mixture is combined but still slightly chunky. Stir in green onions and refrigerate mixture for 30 minutes.
- Coat a skillet olive oil and heat over medium-high heat. Form four patties from the burger mixture. Fry in a skillet for 5-6 minutes on each side.
- Toast buns and top with pineapple rings and any other desired toppings.
- Place finished patties on buns and serve.
