This weekend while we were having one of “spring snow” storms (the kind that snows one day and it’s gone tomorrow) and I was craving something healthy so I whipped up this Mediterranean Salad. OMG, so good. I had some of my hummus in the fridge, but you could use your favorite store bought version if you like. That’s what is nice about this salad, you can purchase most everything at the deli counter and just pull it together really quick. It’s also so pretty. The Mediterranean Salad would also be perfect for a party as well. Just serve on a really big platter and let your guests help themselves!
Yesterday we had another storm (it’s 60 and sunny here today and all the snow has melted)! I had lots of extra ingredients from the original Mediterranean Salad, so I mixed everything together with some cooked quinoa, mixed veges, olive, about a half cup of feta cheese and poured some dressing over the top! This is just a different way to mix things up for another delicious lunch!
Try it, you will like this Mediterranean Salad.
- 1 cup olive oil
- 2 cloves garlic minced fine or put through a garlic press
- 1/2 red wine vinegar
- 2 tbs honey
- juice from 1/2 lemon
- 2 tbs capers chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- Assorted olives and mini red peppers from the olive bar at your local store
- artichoke hearts
- hearts of palm
- hummus
- feta cheese
- green or red onions
- 2 cups of cooked quinoa
- pita bread
- sliced or chopped cucumbers
- baby tomatoes
- chopped fresh parsley
- chopped carrots
- Add garlic, vinegar, honey, lemon juice, salt, pepper and capers to a bowl. Slowly whisk in oil until dressing becomes thick.
- You will have leftovers of this, store in an airtight container in the refrigerator for later use.
