One year later, I still have my food blog and have loved every minute of it. Who knew writing recipes, posts and photography would be so much fun! Thanks for everyone’s support. I hate the word “journey” (so over used, and just lame) so I will say such a great learning experience! There is much more to blogging than meets the eye! Shout outs to Lea Ann Brown over at www.highlandsranchfoodie.com and Yvette Marquez-Sharpnack at www.muybuenocookbook.com for being such great inspirations and food blog guru queens willing to share their knowledge and expertise! You gals rock it and are truly great ladies that I am proud to call friends! You guys pushed me over the edge to go for it and start a blog. It’s been a great edge to jump off of, feet first, of course!  Thanks you ladies!

So with all the “ah shucks” items off my plate, Cherry Chicken Salad is on it now! As I may have mentioned in the past, I am a tennis addict. I play at least 5 days a week. sometimes up to ten matches in a week, depending on tournament schedules and the like. I’m nuts, but loath the gym. One of the perks of tennis, besides the team aspect, it’s really social. After all our home matches we host a picnic. This one happens to be a lunch. All the team members bring something to share. Today I brought Cherry Chicken Salad. Fortunately, all the gals on my team are on board for bringing yummy things for everyone to enjoy. Other teams always look forward to coming to our courts because they know that they will eat well!

I was going make a chicken salad anyway because everyone likes it and it’s easy to make mini sandwiches and then I saw my bag of cherries. Beautiful cherries. I had to incorporate them into this chicken salad. In the past,  I have used dried cherries, so why not fresh ones? A different variation instead of the typical grapes! The fresh dill from the garden is an added bonus!  I hope you try this Cherry Chicken Salad, it turned out really yummy!

Cherry Chicken Salad

A variation on an old classic. Super easy to make!
Ingredients
  • 1 cup celery diced small
  • 1/4 cup red onion diced small
  • 1 cup sliced fresh cherries
  • 2 cups diced cooked chicken
  • 1/2 cup toasted almond slices
  • 1/2 cup mayonaise
  • 1/2 tsp garlic powder
  • 1 1/2 tbs chopped fresh dill
  • 1/2 tsp salt
  • 1/2 tsp pepper
Instructions
  1. Put all ingredients into a large bowl and mix well. Readjust the seasoning if necessary.
  2. Serve as a sandwich or as a salad.
Notes
I don’t care for a lot of mayo, but this loosens up a bit if you store in the refrigerator for an hour or so.

I don’t have a cherry pitter, so slicing around the seed works just as well!
