For as long as I can remember, on Father’s Day, my Dad and me sprawl out on the couch, eat Cheetos, have a beer or two and watch the US Open on TV. It’s what we do and it’s always fun. This year instead of baking him a blueberry pie, I decided to mix it up and bake him a “Black and Blue” Berry Cobbler. Blackberries are my favorite and they have been so yummy that I needed to incorporate them into something, anything!!! Cobblers are fun to make because they come together really quickly and turn out so good that you would be hard-pressed not to eat the whole thing… Anything with blueberries and blackberries reminds me of Summer, so this “Black and Blue” Berry Cobbler is the perfect thing to make!
This past weekend, my tennis gals and I headed up to Breckenridge for a tournament. We do it every year not only for tennis, because Breckenridge is such a fun town. (I hate to ski there though, it’s too crowded, too flat at the bottom and it takes forever to get to the top where the good skiing is). Anyway, we always seem to whoop it up which isn’t hard to do with this crew. As a bonus, it was Mary’s birthday so we had an excuse for an extra few cocktails… We started out on Friday at the Tiki Bar in Dillon. My favorite bar in Colorado mainly because I can get my “water” fix as the bar is at the marina and overlooks the most beautiful big lake in our state. They also have awesome food and you have to try the rum runners, only one though as they are pretty strong and at high altitude, it goes straight to your head! Saturday we started our day with crepes from Crepes A La Cart. OMG! Why have I never had breakfast here before? It’s been a Breckenridge staple for years. I had an eggs benedict crepe with spinach. I couldn’t finish it but so worth every 10 thousand calories, heck we were playing tennis right? After we all lost our matches (sad), we all had massages by one of my best friends Page who co-owns Breckenridge Acupuncture and Message. Page is a miracle worker and if you are ever in Breck, make sure you set an appointment. Trust me on this one! Since it was Mary’s birthday we had to celebrate and she was craving oysters. Not typical Colorado food and there is only one restaurant in Breck that has them. Southridge Seafood Grill. Before we headed over for oysters, we started out at Fatty’s for appetizers and cocktails. I love this place for its atmosphere, great apps, drinks and it’s amazing flower display in the summer! It’s “so” Colorado! If you are in Breck make sure that you hit up Southridge Seafood Grill. They do it right and the seafood was flown in fresh Saturday morning! Who woulda thunk? So good, it was like being on the Cape! We all had oysters, mussels in a red Thai curry sauce and this way too good fresh-baked bread. Oh my, did we pig out but so worth it! Bonus, Pete the bartender was so much fun and pours really good drinks! We were all happy gals and Mary had a great birthday which is what we all wanted for her! What a FUN weekend! Breckenridge never has a dull moment!
- 12 oz blueberries
- 12 oz blackberries
- 2 tbs flour
- 1/2 cup sugar
- juice and zest of one lemon
- 3/4 cup milk (I used almond milk)
- 1 cup of sugar
- 1 tsp salt
- 2 tsp baking powder
- 1/2 cup rolled oats
- 1 cup flour
- 4 tbs butter, melted
- Place blueberries and blackberries in a medium-sized bowl. Add 2 tbs flour, 1/2 cup sugar, lemon juice, and zest. Stir until well combined and set aside.
- Melt butter and place in the bottom of a 9×13 baking pan.
- In another medium-sized bowl whisk together the milk, sugar, salt, baking powder, rolled oats and flour until well combined.
- Pour the batter over the melted butter. Do not mix it. Add the berries over the batter. Do not mix that either.
- Place the cobbler in a 350-degree oven and bake for 40-45 minutes or until a knife comes out clean.
- Serve warm with ice cream or whipped cream.
