Just in time for Cinco De Mayo! Guacamole with a little something extra. I could eat this all day!

Yikes! We seriously had four straight days of snowy wet weather or as the weather people say, a “wintery mix”, which is code word for “it sucks” outside. Yep that was pretty much our weekend in Colorado. I got lucky though, I had to show houses all weekend to clients and it’s kinda a fun thing to do when you can’t play outside! To me it’s more fun than going bowling or to a movie on a cold wet day! Haha!  Anyway, since I am two days late on my post this week, I decided to make a quick and easy Guacamole recipe. My Guacamole is my most requested recipe from all my friends. I pretty much bring it to most parties that I go too as it’s so easy to put together and I know that I won’t have any leftovers! Last night was no exception, we had our first home match for my tennis league. We always hang out with the other team after our matches, drink wine and nosh on yummy stuff. I brought the Guacamole. This time, I added my new favorite cheese, Cojita. Cojita makes everything taste better because of it’s slightly salty flavor and crumbly texture. It sounds weird but it really is a perfect addition to guacamole! Give it a try or leave it out, it’s just good Guac either way! This Thursday is Cinco De Mayo, so if you have a party or two this weekend, this will be a great recipe for the pot luck. I know that I will be making it at least once more this week! Can’t wait! I could eat it all day and tomorrow for that matter! 🙂

Guacamole with a twist! Cojita cheese. It makes for an extra special guacamole… Perfect party food.
Ingredients
  • Guacamole
  • 3 large avocados
  • ½ cup tomatoes, chopped
  • 1 jalapeno pepper, seeds removed and minced
  • 1 clove garlic, minced
  • ¼ cup cilantro, chopped fine
  • ¼ cup purple onion, chopped fine
  • ¼ cup cojita cheese, crumbled
  • 1 lime, juiced
  • ½ teaspoon salt
  • ½ teaspoon pepper
Instructions
  1. Cut the avocados in half and remove the pits and the skin. In a large bowl, mash the avocados and stir in the remaining ingredients and combine well. Adjust seasoning as necessary and sprinkle with additional cojita cheese. Serve with tortilla chips.

You would never guess that we had four straight days of crappy snowy weather… Let the tennis league season begin!

I think I will have waaay too many tomatoes this year! Funny thing, the labels are all gone, so it’s gonna be a mystery til they start producing. Yellow pear, cherry or Roma..
