So remember last fall when I gutted and remodeled my kitchen? It turned out so nice and I have been happy with everything except for my expensive appliances. Can you imagine that every single appliance has had to be repaired? Six months, I have had a new ice maker and new shelves in the refrigerator (shelves were the wrong size and kept falling out), the lights in my microwave were somehow rusted out and the mechanisms needed to be replaced, the dishwasher needed a new pump and now it doesn’t drain (waiting for that part to come in) and the big kicker is that the control panel on my stove went out not once but twice. I got the first one replaced but last week the replacement, literally blew up right in front of me and almost caught fire. Luckily I was home and could turn the breakers off to it. Needless to say, this gal is pretty darn pissed.
I have been in serious dismay over the fact that my new Kitchenaid appliances could not make it through 6 months. I did my research and believed that they would be great products. I’m not certain that it’s Kitchenaids fault though. After hours upon hours on the phone with them and going back Appliance Factory Outlet (never, ever buy anything from them, they are downright horrible), I wasn’t getting anywhere. I thought it was crazy that my model and serial numbers did not match what Kitchenaid said they should be, so it makes my wonder where APO is getting their stuff. It’s freaking weird but at least they have the warranty. Finally, after talking to at least a dozen people and being passed around like candy at Kitchenaid, I talked to like my 3rd supervisor who actually cared and was willing to help. Fingers crossed but she is supposedly having a new stove and dishwasher sent to me. I’m still another 2 weeks without a kitchen though. Let’s hope she does what she said she would do, otherwise, this gal will go completely ballistic!
The good news is, I have my Traeger! Besides being a fabulous smoker and grill, you can use it as a convection oven as well! I even cooked my sauce for this weeks recipe on the “T”. For some reason this summer, I have noticed “beef ribs” at my grocery. I’m not sure why I haven’t seen them before but I thought I’d give them a try. It turns out they were super easy to make and what’s better, you can do on any sort of grill. You just need to cook them low and slow!
I decided on Zesty Horseradish BBQ Sauce on Beef Ribs this week because A: I bought beef ribs and B: I thought that horseradish goes great with beef. Why not a zesty and a little sweet sauce to go on the side? I’ll tell ya, making your own BBQ sauce is the way to go. It’s an easy way to bring certain flavors to the table in a bit of an unexpected way. Seriously, give the Zesty Horseradish BBQ Sauce on Beef Ribs a try. Not a fan of beef ribs? This dry rub and sauce would be amazing on tri-tip! Oh man, a tri tip sandwich with this sauce would be heaven!

We will be going out on my new paddle board and sailing in the next few weeks so I want him to be safe. Sure enough, he can swim with the life vest. He hated it, but he did it! Made me laugh. Charlie dog got outfitted too. He is old and it’s best he has one as well!

- 8-10 pound Beef back ribs
- [br][b]All Purpose Beef Dry Rub[/b][br]
- 2 tablespoons paprika
- 1 tablespoon salt
- 2 teaspoons granulated garlic
- 2 teaspoons granulated onion
- 2 teaspoons pepper
- 1 teaspoon chili powder
- 3 tablespoons brown sugar
- [br][b]For the Zesty Horseradish BBQ Sauce[/b][br]
- 2 cups ketchup
- 3-4 tablespoons prepared horseradish
- 1/4 cup Worcestershire sauce
- 1/4 cup red wine vinegar
- 1/4 cup brown sugar
- 2 teaspoons dried mustard
- 1 teaspoons paprika
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- 1 teaspoon pepper
- 1/2 teaspoon salt
- In a small bowl, combine the paprika, salt, garlic, onion, pepper, chili powder and brown sugar and mix well. Set aside. (make extra and store in an airtight container for later use).
- In a medium sized pot, add the ketchup, Worcestershire, horseradish, vinegar, sugar, paprika, garlic, onion, mustard pepper, and salt. Stir to combine well, cover and simmer over low heat for 1/2 hour. Set aside.
- To prepare the ribs, heat your grill to 225 degrees. Liberally coat each side of your rack of ribs with the dry rub. Place bone side down and cook for 5-6 hours. Each hour spray with apple juice or your favorite beer. On hour 5, begin to baste the ribs with the sauce every 15 minutes or so.
- After hour 6 remove and serve with extra sauce!
