In a large bowl, whisk together the eggs, Cholula, ketchup, salt, pepper, cumin, and chili powder. Add the bread to combine. Set aside.
Coat the bottom of a large saute pan with olive oil. Heat to medium heat. Add the onions, green chili, sweet pepper, and garlic. Season with a pinch of salt and pepper. Saute for about 5 or until vegetables are soft. Set aside and cool for about 10 minutes.
To the bread mixture, add the hamburger, pork, vegetable mixture, and cilantro. Take your rings off your super clean hands and get in there and combine the meatloaf until all the ingredients are well incorporated.
In a small bowl, add the Cholula, ketchup, and honey and whisk until incorporated. Set aside.
To make the meatloaf, place the meat and make one large loaf into a large baking dish or bread pan. You will want there to be room on the sides because there will be quite a bit of liquid that is released while cooking. Pour the Cholula glaze over the meatloaf and spread evenly.
Bake at 350 1hr to 1hr15 OR or until the internal temperature reaches 165 degrees. Let sit for 10 minutes before serving.
