Cod with Fresh Herb Sauce

Cod with Fresh Herb Sauce is easy to make and super flavorful for any weeknight meal or even a dinner party! A perfect meal to make for Lent!

This recipe would be great with any fish that you like. The sauce would also be great with chicken or steak!

Ingredients

For the Fresh Herb Sauce

  • 1 bunch flat leaf parsley, stems removed about 1 cup loosely packed
  • 1/4 cup fresh dill, stems removed
  • 2 tablespoons chopped shallots
  • 2 teaspoons minced garlic
  • 2 tablespoons drained capers
  • zest from 1 lemon
  • juice from 1 lemon
  • 1/2 cup olive oil
  • salt and pepper to taste

For the Fish

  • 1 1/2 -2 pounds firm white fish or salmon filets
  • olive oil
  • salt, pepper and paprika (not smoked paprika)

Instructions

For the Fresh Herb Sauce

  1. Place all the ingredients into a food processor or blender and process until smooth. Add salt and pepper to taste and set aside. 

For the Fish

  1. If you want to bake the fish, preheat the oven to 400 degrees. Liberally drizzle olive oil over both sides of the fish and season both sides with salt, pepper and, paprika (not smoked paprika). Bake for 12-14 minutes or until the fish flakes easily with a fork. Cooking time will depend on how thick the fish is. 

  2. If you want to saute the fish, heat the saute pan to temperature over medium heat.  Liberally drizzle olive oil over both sides of the fish and season both sides with salt, pepper and, paprika (not smoked paprika). Saute for 3-4  minutes per side or until the fish flakes easily with a fork. Cooking time will depend on how thick the fish is.
