Green Chili Cholula Meatloaf

Who doesn’t like a good slice of meatloaf? Well, this one isn’t your typical old lady meatloaf, this one is kicked up with green chili and Cholula Hot Sauce. Green Chili Cholula Meatloaf is so over the top delicious.

If you know me, you know that some pretty crazy things have landed in my lap at the most serendipitous times. This story that I’m about to tell you pretty much sums it up in such a fun way! A couple of months back when a neighbor brought me forty-eight (yep, forty-eight) eggs from her backyard chickens, I made quiches to bring to my tennis picnic. In typical fashion, I added 1/4 cup of Cholula Hot Sauce to each quiche along with bacon and veggies from my garden. I love the unexpected flavor that Cholula brings to something that you wouldn’t normally expect in a quiche. Anyway, as the ladies were devouring the quiches they all started to ask, “what’s that slightly smoky flavor and just a little kick”? I said it’s “Cholula”! Seriously as I was saying “Cholula”, my phone beeped with a new email, I checked my message and you won’t believe it, but it was “Cholula” sending me a message asking if I would like to collaborate with them! Holy cow, serendipity at its finest.

After a phone call with their marketing gal, I learned that Cholula has been following me because I use their sauce in a ton of my recipes. I must say that I have always loved their product, have been using it for years, and truly do cook with it all the time! So needless to say, I was more than thrilled to come up with a new recipe for them! With the change of seasons happening,  I thought it would be appropriate to come up with a new meatloaf recipe. I mean who doesn’t love a good meatloaf? In my opinion, green chilies and meatloaf are perfect together. The flavors in the Cholula enhance the flavors of the roasted chilies in such a great way! So Green Chili Cholula Meatloaf was developed. If I do say so myself, this is pretty much the best meatloaf that I have ever made. The Cholula in the meatloaf and the glaze on top add such an amazing taste that you just might agree with me on this one! Give this recipe a try. Just a warning though, it makes a big meatloaf. Perfect for leftovers and the ever-so-yummy meatloaf sandwich the next day!

This week has been quite exciting for me! I got my cabinets installed and I’m pretty thrilled with how everything is coming together. The cabinets are really pretty but the problem is that I feel so little. Going from 24″ to 42″ cabinets sure can make a short girl feel really short. I guess a step stool will be my new best friend! Lol! I did have one set back though. The big pantry that I had built was way too big. I’m not sure how it got measured wrong, but it did and there was no way that it would fit in my kitchen. I’m glad that I caught it before it was installed because that would have been a nightmare. So problem solved, the cabinets get sent back and cut down to 18″ from 24″ inches deep. So now I wait. I’m praying that Thursday my installer can get back here and install it, otherwise who knows when he can come back. Friday, new counter tops, kitchen sink (yeah water),then back splash, trim work and final electrical. So it’s coming along and knock on wood, one snafu isn’t so bad for a full kitchen remodel! I can’t wait until it’s done and I can enjoy my new space!

Green Chili Cholula Meatloaf

For the Meatloaf

  • 2 pounds 80/20 hamburger
  • 1 pound ground pork
  • 1 cup diced onion
  • 1 cup diced green chili
  • 1 1/2 tablespoons minced garlic
  • 1 cup diced sweet bell pepper red, yellow, or orange
  • 1 1/2 cups cubed white bread
  • 2 eggs
  • 1/2 cup Cholula® Original Hot Sauce
  • 1/4 cup ketchup
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 1/2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1/4 cup fresh cilantro chopped

For the Sauce

  • 1/2 cup Cholula® Original Hot Sauce
  • 1/4 cup ketchup
  • 2 tablespoons honey


  • In a large bowl, whisk together the eggs, Cholula, ketchup, salt, pepper, cumin, and chili powder. Add the bread to combine. Set aside.
  • Coat the bottom of a large saute pan with olive oil. Heat to medium heat. Add the onions, green chili, sweet pepper, and garlic. Season with a pinch of salt and pepper. Saute for about 5 or until vegetables are soft. Set aside and cool for about 10 minutes.
  • To the bread mixture, add the hamburger, pork, vegetable mixture, and cilantro. Take your rings off your super clean hands and get in there and combine the meatloaf until all the ingredients are well incorporated.
  • In a small bowl, add the Cholula, ketchup, and honey and whisk until incorporated. Set aside.
  • To make the meatloaf, place the meat and make one large loaf into a large baking dish or bread pan. You will want there to be room on the sides because there will be quite a bit of liquid that is released while cooking. Pour the Cholula glaze over the meatloaf and spread evenly.
  • Bake at 350 1hr to 1hr15 OR or until the internal temperature reaches 165 degrees. Let sit for 10 minutes before serving.
