Granola

Ingredients

  • 4 Cups whole oats (not the quick process kind)
  • 1 1/2 Cups chopped nuts (whatever you like or a mix of couple of kinds)
  • 1 1/2 Cups dried fruit (whatever you like)
  • 1 cup dried coconut (optional)
  • 2 Tsp ground allspice
  • 1 Tbs pure vanilla extract
  • 1 cup maple syrup or honey
  • 3 Tbs coconut oil or butter (melted)
  • 1/4 Tsp salt

Directions

Add oats, dried fruit, nuts, coconut, vanilla and salt in a large bowl. Mix well. Add maple syrup or honey and coconut oil or butter until well incorporated.
Set oven to 300 degrees. Prepare a large rimmed cookie sheet with foil or parchment paper. Place granola mixture on baking pan. Set timer for 15 minutes and give the granola a stir. Set timer again for another 15 minutes and give it another stir. Set for another 10 minutes or so. Keep an eye on it at this point so it doesn't over cook. The granola is done when it is a beautiful golden brown.
