Who doesn’t love a S’more? I’m not sure because I sure do. I equate eating a S’more to summertime, camping and backyard BBQ’s however our Colorado weather has been so dang crappy that I had to improvise for last weekends festivities, the “indoor” kind of S’more. S’more Brownie. Equally as delicious, just a little less messy.. Making brownies is easy and they come together quicker than baking cookies and what is better than a crispy outer layer and gooey center. Not much in my book. Give these a try for any special occasion or just for the heck of it!
I love Sunday’s. Especially the ones where totally impromptu things happen and it turns out to be super fun. That’s what happened last weekend. The weather was crummy AGAIN and we couldn’t play tennis or go for a hike, so me and my girls decided that we would go bar hoping instead. Most “normal” people in Denver head downtown but not us! We decided to paint the town red in Sedalia, CO and hang out at a few “joints” (not smoke them, lol)! Heck they have three bars right? We started at the ever so popular Bud’s Bar (best burger on the planet and they only take cash), then we went to Gabriel’s a very upscale restaurant off the beaten path that has a really nice bar and then over to the Buckskin’s Saloon which very well could be named as the best dive bar ever. Did I mention the plywood floors and walls and quite possibly the worst plate of nachos that I have ever eaten? How do you mess that up? We really didn’t go there to eat, we just wanted to play pool! So Sunday wasn’t a bust and ended up being so fun despite all the rain! We all need days like Sunday. Unpretentious, unassuming, great laughs and tons of fun!
- 20 Graham cracker squares
- 1/2 stick butter melted
- 1 cup sugar
- 1 stick of butter melted
- 2 tsp vanilla
- 2 eggs
- 1/3 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup flour
- 1 cup dark chocolate chips
- 1 1/2 cups mini marshmellows
- In a food processor pulverize the graham crackers. Add the butter until well combined. Spread mixture out evenly on a parchment paper lined 9×13 inch baking pan and bake at 350 degrees for five minutes until lightly browned. Set aside to cool.
- In a stand mixer (or a hand held mixer) blend together the butter and sugar until well incorporated. Add the eggs and vanilla and mix until light and fluffy.
- Turn off the mixer and add the cocoa powder, salt, baking soda and flour. Turn the mixer back on and mix well.
- Stir in by hand the chocolate chips and marshmallows.
- Place the brownie mix evenly on top of the graham cracker crust.
- Bake at 350 degrees for 25-30 minutes.
- Let cool completely before serving
