Craving Asian Lettuce Wraps? I was, and it was what was for dinner Saturday night.
After a long day being out and about on Saturday, my poor dogs needed some attention. So going out to grab some Asian Lettuce Wraps was out of the question. (Dog Mommy guilt kept me home). I love lettuce wraps. They are light and healthy, low in carbs, inexpensive to make and super tasty. They are even great the next day, and in my case, they will be great today too!
Asian Lettuce Wraps are also great to bring to a party. If you use the Boston Bibb lettuce the leaves are pretty little. Just add a tablespoon of the mixture onto a leaf and arrange on a large plate. You will be surprised how many of these little morsels you can make. Your friends will love you for bringing them and the hostess will want to know how you made them.
Try this recipe. Easy to make any night of the week!
- 1 tbs olive oil
- 1 pound ground turkey or hamburger
- 2 medium carrots diced
- 1 jalapeño pepper seeded and minced (optional)
- 2 garlic cloves minced
- 1 tbs fresh ginger root minced fine (or 2 tsp ground ginger)
- 1 bunch green onions chopped small, white and green parts
- 1/3 c Hoisen Sauce
- 1/3 c low sodium Tamari (or soy sauce)
- 2 tsp sesame oil
- 4 tbs sweet chili sauce
- ½ c chopped peanuts
- ½ c chopped fresh cilantro
- 1 bunch Boston or Bibb lettuce
- Coat bottom of large non stick pan and heat on medium high. Add ground turkey and cook until almost cooked through. Strain off fat and add back to pan.
- Reduce heat to medium and add carrots, jalapeno pepper, ginger and cook for 5 minutes. Add garlic and green onions and cook for an additional 3 minutes.
- Add hoisin sauce, tamari, sweet chili sauce and sesame oil. Mix thoroughly and cook an additional 3 minutes or so.
- Mix in chopped peanuts and fresh cilantro.
- Carefully remove leaves from lettuce (the leaves need to be left whole).
- Spoon a serving of meat mixture into lettuce leaf and serve.
