As you have probably noticed from all my posts, I rarely bake. Mainly because I don’t like to have baked goods in the house. I would never eat them all in one sitting but things like this sit in my freezer and I will eat them over time. It’s just better that baked goods stay away from me and my thighs! Anyway, I was asked to bring a dessert to a gathering. Perfect! I can share and not bring anything home! So in keeping with the cherry theme (they have been so darn amazing this year), I thought that I would bring cherry brownies. I made one batch and then thought it would be so much better if the cherries were soaked in brandy. Who in the world doesn’t love alcohol soaked fruit? Hopefully not too many people! These Drunken Cherry Brownies are so decadent and rich with double chocolate goodness but also have a surprising “kick” when you bite into a drunken cherry. Perfect dessert to bring to an adult only party. Live on the edge and try them, something different, something new, you won’t be sorry, neither will be your friends! They may even give you a big “cherry” kiss!
- [br][b]For the Brownies[/b][br]
- 1 cup chopped fresh cherries
- 3/4 cup cherry flavored brandy
- 1 4 oz chocolate bar at least 60% cacao
- 1 cup butter
- 2 cups sugar
- 3 eggs
- 2 tsp vanilla
- 1/2 tsp salt
- 3 tbs cherry flavored brandy
- 1 1/2 cups flour
- 1/2 chopped walnuts
- [br][b]For the Frosting[/b][br]
- 1 4 oz chocolate bar at least 60% cacao
- 1 16 oz bag of powered sugar
- 1/2 cup butter
- 2 tsp vanilla
- 3 tbs cherry flavored brandy
- 4 tbs milk
- The night before you want to make the brownies, soak the cherries in the cherry flavored brandy in an air tight container in the refrigerator.
- Strain the cherries and reserve the brandy for the brownies and the frosting.
- Pre-heat oven to 350 degrees and prepare a 9×13 baking pan. Line with parchment paper or tin foil and spray well with cooking spary.
- In a medium sized microwave safe bowl, place chocolate and the butter in the microwave to melt. This took about a minute and a half. Stir well to fully incorporate. Let cool for about five minutes.
- In a large bowl, add the eggs and sugar. Mix well with an electric mixer.
- Add, vanilla salt, brandy and cooled chocolate and butter mixture. Mix well.
- Add flour and mix to fully incorporated.
- Stir in cherries and walnuts.
- Pour brownie mix into prepared baking pan and bake for 25 minutes or until a done.
- Remove from oven and let cool for at least four hours, especially if you plan on frosting the brownies.
- [br][b]For the Frosting[/b][br]
- In a medium sized microwave safe bowl, place chocolate and the butter in the microwave to melt. This took about a minute and a half. Stir well to fully incorporate. Let cool for about five minutes.
- In a medium sized bowl add sugar, vanilla, brandy and milk. Stir well to incorporate.
- Fold in melted chocolate and butter until well incorporated.
- Spread frosting over cooled brownies and let sit for about an hour until frosting sets.
