Cobb Salad with Warm Bacon Vinaigrette

COBB SALAD WITH WARM BACON VINAIGRETTE

Warm Bacon Vinaigrette is so darn good that it would make a shoe taste good! I love the whole sweet and salty experience!

This week has been so warm that all I can think about is that summer is right around the corner and that I actually have to put a bathing suit on next week. Eeeks! The workouts with the trainer have been awesome over at Iron Tribe and I can already tell that after five weeks my tennis game has gotten a lot stronger. The whole point of going to the gym for me. I normally loath going to the gym but this workout is not only fun, it kicks your ass. Literally. So they are into this whole “Paleo” eating thing, not really for me but Cobb Salads are. Heck, it’s not like you eat the whole batch of warm bacon vinaigrette, right? I made my “Cobb” with Honey Smoked Salmon this time cause it’s all I had in my fridge. Turns out it was a super tasty alternative!

In my “real” life, I am a Realtor. I have had a cool experience with a new friend and now client. Misty and me met in a bar at the airport before we flew to NOLA last fall. We sat on the plane together and became fast friends. She is born and raised in Louisiana. This is important because it’s the beginning of the story of our weekend. We had plans to look at homes this weekend and then hit up a crawfish boil afterwards. So it was going to be a fun day. The funny thing is that the building where she is going to buy her condo is across the street from Bayou Bobs and old school, been around forever, best Cajun restaurant in Denver. We got to meet Bob the owner and he charmed us gals like no ones business. Such a nice man and he even sent over samples of his most popular dishes! The best thing is that they “deliver” to the building that she is going to live in! Po’ boy delivery at midnight? Sounds just about right to me!


We left Bayou Bob’s and headed over to Mile High Spirits. A local distillery that makes really top notch liquors. I bought my bottle of Elevation vodka for at home cocktails!  Denver is not only known for world class breweries but for equally it’s amazing distillery’s! Who would have known and we are really quite lucky to have such high quality products that are locally made! Mile High Spirits is a lot like many places that serve alcohol- no food, but plenty of food trucks on hand! This time my friend Terry with Rolling Smoke BBQ was throwing a good old fashioned craw fish boil. 900 pounds of it and the place was packed! I was a crawfish eating virgin until yesterday and I’m glad that I lost it to this batch of goodness! Rolling Smoke was also serving world class BBQ at this gathering, dang, when we left there had to be at least 500 people having a good ol’ time! Oh, the Southern music was rocking the whole time too. Such a fun Denver, Saturday afternoon experience!

 

Cobb Salad with Warm Bacon Vinaigrette
Recipe Type: Main Course

The warm bacon vinaigrette is awesome with the Honey Smoked Salmon. It’s also great for a dressing with a regular spinach salad.
Ingredients
  • Mixed green salad
  • 1 cup Honey Smoked Salmon
  • 2 hard cooked eggs, sliced
  • Sliced red onion
  • Cherry tomatoes
  • 1/2 cup blue cheese crumbles
  • 1/2 cup sliced green onions (green parts only)
  • 4 slices bacon, chopped
  • 1/4 sliced almonds
  • [br][b]Warm Bacon Vinaigrette[/b][br]
  • 2 tbs reserved bacon grease
  • 1/3 cup olive oil
  • 1 tbs garlic, minced
  • 2 tbs honey
  • 2 tsp brown mustard
  • 3 tbs apple cider vinegar
  • 2 slices of bacon, chopped
  • pinch of salt
  • pinch of pepper
Instructions
  1. In a small sauce pan, add the bacon grease, olive oil, garlic, bacon, honey, vinegar, mustard, salt and pepper. Whisk well and bring to a simmer.
  2. In a large bowl, toss together the salad mix, onion, tomatoes, blue cheese, bacon, green onions and almonds. Top with the salmon and eggs.
  3. Drizzle the warm bacon vinaigrette over the salad and serve.

We got to meet Bob the owner! Such a nice guy, he even brought us a “sample” platter for us to try. According to my friend from NOLA, it “tasted” like home!

This is a really cool distillery in Denver and they make all their own booze. Don’t ask for a beer, they don’t have any!

    Great looking mud bugs and that Cobb salad sounds to die for (that’s a good thing we say here in the South, don’t get offended lol). We fell in love with the warm bacon vinaigrette when we tried it at Rafferty’s in Knoxville. We came up with our own version that we liked better and yours is pretty similar so I’m sure it is knock your socks off good!

      So not offended Chris! We say that in the West too! I actually thought about you when I made this salad. The smoked fish and all! The dressing is awesome with it! Actually is is awesome with anything- it’s made with Bacon! Nuf said!!!
