I don’t know about you but I have basil coming out of my ears this summer! For some reason, the basil is loving our hot and cool summer with a lot of rain. My cilantro, not a chance, it’s all wilted and has sadly has all passed. I’ll save the seeds and plant them for hopefully a fall crop!
Anyway, Pesto is one of my 10 ten things that I always make. I’ll end making probably 20 cups of this green goodness throughout the summer and store it zip lock bags and freeze for the cold winter months when I’m craving something that reminds me of long days and heat!
I wanted to get this posted first before I start posting some of my favorite things to make with pesto. Of course, it’s delicious over pasta, but even better other ways! One thing that I like to do is marinate chicken or a flank steak in pesto and grill it! The cheese gets all crusty and good! Try this over a Ceasar Salad! Yum!
It’s so easy to make pesto. No chopping and just a blender or food processor. That’s it. Start making it now and you can stock up for winter!
- 4 cups basil leaves
- 1/2 cup Parmesan cheese
- 2-3 garlic cloves
- 1/4 nuts
- pinch of salt
- 1/2 tsp pepper
- 1 cup olive oil
- Put basil, cheese, garlic cloves, nuts, salt and pepper in a blender.
- Turn on high and slowly add olive oil.
- Makes 2 cups.
So I had to post some pictures from my garden! It’s finally taking hold with all the hot weather that we have had lately. It’s monsoon season here. Hot days and lots of rain make for a happy garden!

I love your idea about the pesto and flank steak. I’ll be trying that soon. My one little basil plant on my patio has become BasZilla. You’re right it’s a good year for basil.
