Peach Cobbler with Candied Almonds

Well, if this Peach Cobbler with Candied Almonds isn’t a plate of love, I don’t know what is! I love it when the scoop of ice cream gets all melty! It’s heaven on a plate!

Yesterday, I saw this great meme that said, “Whoever said “all you need is love” has clearly never had peach cobbler with vanilla ice cream”.  I thought about this and decided that I needed to make a peach cobbler because, well, in my book peach cobbler is love! I made this version a bit different by adding a crunchy candied almond topping. This is the pièce de résistance and puts it over the top from your everyday peach cobbler!

What is a cobbler?

A cobbler is a delicious dessert that utilizes fresh fruit in season (I used Palisade, Colorado Peaches) that is topped with a batter, biscuits or dumplings and baked until bubbly and decadent.  It’s different than your normal summertime pie as it’s best served hot with a big scoop of vanilla ice cream!

Why I love Cobbler

I love cobbler because it comes together really quick as desserts go. Cobblers are great with just about any fresh fruit. Peaches, apples, blackberries, blueberries, strawberries or heck a mixture of fruits! I think that cobblers are the perfect dessert for entertaining as they are always a crowd-pleaser. Cobblers also quite big so they are a perfect dessert for a party!


You will see a lot of recipes that call for cooking the peaches first. I say skip this step completely. The peaches cook in the oven (think apple pie and how the apples get all soft and delicious), so if you cook them ahead of time, it turns into peach mush… Not good in my book. This is what is so great about this recipe, minimal prep!

Keep an eye out in the recipe for the top-secret ingredient! It’s essential as it adds enormous extra flavor! Bonus points to anyone who can figure it out! 🙂

After you slice the peaches, just go ahead and put them in the baking dish. There is no need to cook fresh peaches as they will soften up and make their own sauce while you bake it!

Making Candied Almonds

Candied almonds make this peach cobbler over the top delicious. It’s a rich, buttery and crunchy topping that gives this (or any cobbler for that matter) an extra “wow” factor. The warm peaches, the soft cookie center, and the crunchy topping hit all senses that we all crave. The candied almonds give this cobbler the extra layer that, in my opinion, a cobbler needs.

Pay special attention to the almonds though when you are cooking them. They will burn quickly, so stir them constantly and adjust the heat accordingly if they are browning too fast. Make sure to quickly pour the browned almonds over the cobbler immediately when they are still in their melted stage. The will “candy” up as soon as they begin to cool!

When you cook the almonds, make sure that you are stirring constantly. They will burn real quick if you are not careful. You will want to take them off the heat when they reach this stage!

Peach Cobbler with Candied Almonds

Ingredients

For the Peaches

  • 3 pounds fresh peaches pitted and sliced 1-inch thick
  • 1/2 cup sugar
  • 3 tablespoons peach schnapps
  • 1 lemon, juiced
  • 2 teaspoons corn starch or arrowroot

For the Batter

  • 2 cups flour
  • 1 stick butter, melted
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk

For the Candied Almonds

  • 4 tablespoons butter
  • 1 cup sliced almonds
  • 4 tablespoons sugar

Instructions

For the Peaches

  • Pit and slice the peaches into 1-inch slices. Place the peaches in a 9x13 baking dish. Add the sugar, schnapps, lemon juice, and corn starch to the peaches and give it a stir to combine. Set aside.

For the Batter

  • In a large bowl, whisk together the flour, butter, sugar, baking powder, cinnamon, salt and, milk until well combined and most of the lumps have been worked out.
    Evenly pour the batter over the peaches and smooth over with a spatula until all the peaches are covered. Set aside.

For the Candied Almonds

  • In a large sautee pan, melt the butter of medium-low heat. Add the almonds and sugar to the pan. You will want to stir this mixture constantly to avoid burning the almonds. This will happen quickly so keep an eye on it. Cook the almonds until they begin turning golden brown, about 3 minutes.
    Evenly pour the browned almonds on top of the batter immediately while they are still hot. Carefully position the almonds around the top so that all is covered.
  • Bake the cobbler in a 350-degree preheated oven for 35-45 minutes or until a knife inserted into the batter comes out clean. The peaches will be all bubbly and delicious!
  • Let cool for at least 20 minutes before serving and serve with a big scoop of vanilla ice cream.
